How to prepare sorrel soup
Sour soup is one of the traditional Agerine soups, but it is widely cooked in Eastern Europe and has many fans. This soup is for the cold seasons, but because of its taste, you can prepare it as a light snack at any meal.
Sorrel is a plant that can be considered a rich source of vitamin C, so do not neglect it in autumn and winter. Other properties include eliminating seasonal allergies, helping with better digestion, healthy hair and nails, and more.
This soup is prepared in a short time and with its meat or vegetable extract, it helps to recover energy.
Ingredients for making sorrel soup
30 grams of butter
Onion (chopped) one
Garlic (grated) two cloves
A tablespoon of fennel
One large potato (cooked and chopped)
700 ml of chicken or vegetable extract
Leaves smell one
Spinach (chopped) 50 g
Sorrel vegetables (chopped) 50 g
Parsley leaves (chopped) a handful
Dill (crushed) a handful
Fresh lemon half a number
Egg (boil the egg for eight minutes and then peel and chop) one
Two tablespoons sour cream
Salt as needed
Pepper as needed
How to prepare sorrel soup
first stage
Put a pan on the heat, then pour the butter in it until it melts completely, then add the garlic, onion and fennel seeds and fry. Let them rest on the flame for seven minutes to soften.
second stage
Pour the vegetable or chicken extract with the potato pieces and bay leaf into the pot and put it on the flame to boil. This will take 15 minutes.
third level
Add the spinach and sorrel and cook for another five minutes.
Divide into quarters and add fresh parsley to the boiling water, and after a short time, remove the pot from the heat.
The fourth step
Season the sorrel soup by adding salt, pepper and some fresh lemon juice. Transfer the soup to a serving dish and garnish with boiled eggs, sour cream and leftover vegetables, then sip.

If you do not find fresh sorrel, you can use dry packages.
Adding sour cream to this soup is optional, but it is better to use it to improve the taste of the food.
You can also use leeks to make the soup delicious.
